Fried Walleye and Saratoga Squash
Walleye
- 1 cup batter/corn meal mix
- 1 egg
- 1 cup oil
Heat oil on pan. Scramble egg. Put batter mix into a large bowl or plate. Dip unfrozen fillets into egg and then cover with batter mix. Carefully place fillets in pan. Cook for 5 min or until batter mix is golden and fish is cooked through.
Squash
- 1 butternut squash
- 3 tablespoons butter
- 1 tablespoon maple syrup
- 1/4 teaspoon nutmeg
- 1 teaspoon salt until tender
Peel and dice squash. Cook in a small amount of water with about 1tsp. Drain. Whip until smooth. Add remaining ingredients, stirring well. Sprinkle with additional nutmeg before serving.
